The P2 Series focuses on professional caliber function. High-alloy Swedish steel forms the foundation of these incredibly sharp and durable blades. Precise Asian-style edges, exceptional edge retention, and comfortable handles make these knives perfectly suited for commercial kitchen environments.

  • High alloy Swedish 14C28N Steel with exceptional edge retention and sharpness. Durable composite handle made from food-grade plastic and fiberglass. The ergonomically designed, non-slip textured handle provides a sure grip and easy handling even when wet.
  • Each blade goes through an (ultra6) stage heat treatment ensuring every blade maintains it strength and function. Hand sharpened to a 16-degree angle per side.
  • Well balanced 6-inch handle and 10.25-inch serrated blade with HRC 59 +/- 2 on the Rockwell Hardness Scale
  • This paring knife is small, and ideal for peeling and other small or intricate work, like de-veining shrimp, removing the seeds from peppers, and cutting small garnishes.
  • Designed to be an all-purpose knife.
  • NSF International Certified. Lifetime Warranty against manufacturer defects. Wash knives with warm water and a little detergent, rinse carefully and dry with a towel.

    Dangerous knife needs a sheath

    I made a leather one myself. Going elk hunting in 9 months. I think this is the perfect knife for boning the animal so we can fit the meat in our backpack. I’ll send photos.

    Great knife for cutting meat!

    This knife is very sharp and also I am able to cut ribeyes with accuracy. Brisket cutting is a breeze with the knife. . I highly recommend this product. The only downfall I have with it it did not come with a sheath.

    Cangshan, please offer a sheath for this awesome knife!

    Not just for food fanatics

    I've always viewed cooking as a necessary chore. Why would I need fancy knives. When I used a paring knife at a friend's house, I immediately noticed the weight in the handle and how it felt so natural in my hand. I noted the brand, Cangshan, and looked it up at home. Since then I've purchased a paring knife and replaced a few other knives. I bought a vegetable cleaver for the first time - wow, what a difference! Chopping veggies is so easy because I don't need to exert any pressure and it's so much faster. The cleaver does the work, not my arm. I'm a convert.
