    One of the best carving knives under $200

    Strong and sharp Swedish steel with great ergonomics, this carving knife is a hallmark in value. Excellence, as always from Cangshan.

    Top-notch kitchen knife steel

    As an amateur knife-maker, I am familiar with steel and recognized this Swedish steel as being a top-notch kitchen knife steel due to its stainlessness, as well as its ability to take a keen edge. It is not so hard as to make sharpening difficult, so it works wonderfully as a kitchen knife. It was very sharp when it arrived and I then power stropped the edge with a leather belt to make it hair-popping sharp. About the only criticism I could make of this blade is that it is on the heavier side. Apart from that, it is a great addition to the kitchen workshop! Rating it 4.5 stars with 1/2 star deducted for weight. And if Cangshan would like me to review other knives, please feel free to reach out.
